Designed as a batch premix that is packed with the flavours associated with holiday season, rendering it excellent for your holiday party. Save the extra syrup for morning drinks, desserts, or to mix additional servings of bikinis.
The Bikini Cocktail
Makes enough for 10 guests
For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (produces 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Combine the listed ingredients inside a pan, heat until it reaches a light boil, stirring to dissolve. Next, remove from the burner and let it to cool down completely. Decant into an clean bottle, seal and refrigerate it in the refrigerator, where it will keep for around one month.
To make Premix: Pour every spirits and syrup into one sizeable container, allow it to infuse for an hour, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.
When ready to serve: Pour 85ml of your batch mix into a stirring glass containing ice, gently stirring gently for a minute until cold. Filter to a cold coupe glass or equivalent, garnish with the cranberries and complete it with a light spray of mandarin oil above the glass.
